of The Baja Insider, please welcome a new resident to La Paz. Clark Miguel
Angel Iglesias Waters made his debut to the world on Sunday, April 25,
2004. He was born to Clark and Yuli Waters, former owners of Paradise Found
Restaurant and Bar, about 1:40 PM. Those who know Clark will agree that he
never does anything in a small way. This is no exception as “Clarkcito”
weighed in at a whopping 4.250 kilos (about 9lbs 3ozs). Both Mom and baby
are doing fine. They returned home from Salvatierra Hospital Monday
afternoon. Now the fun begins for the proud parents, but don’t worry about
Yuli. She has plenty of expert advice available in the form of her Mother,
2 sisters, and an unknown number of Aunts, cousins, and friends. Between
all of these ladies there is enough baby experience to write several books
on the subject and in true Mexican form, all of these experts are, shall we
say, very forthcoming with their advice and opinions.
Clark and Yuli are the former owners of Paradise Found, a
popular gringo hangout in La Paz, which closed its doors about 6 weeks ago.
Locals and visitors alike mourned the passing of the establishment; famous
for its great margaritas, ice cold beer, and delicious food. Aficionados
won’t have to wait for much longer for a taste of Clark’s culinary magic
though. Clark is in the process of opening a series of “carricitos” or
Hamburger carts. He plans to open the first one around the beginning of May
in the little park area at the end of Calle Encinas, between Marina de La
Paz and Marina Don Jose (Big Abaroa’s to a lot of you). The menu will be
familiar to many regulars as Clark plans to serve his famous Arrachera
Burritos, Chicken rolled tacos, and of course his widely renowned Cheese
Burgers in Paradise. French fries, cold sandwiches, and cold soft drinks
will also be available from Clarks custom built cart. He is also exploring
the legality of adding beer and wine to his menu. His plans are to run the
first cart himself, at least for this summer. He hopes to have a fleet of 5
carts at strategic locations around La Paz by the end of this year. Yuli
plans to return to work in a few weeks helping her Mom run the family shrimp
business.
With a new baby and a new business, we can expect the
happy parents to have a very busy summer ahead of them. Let’s all join
together and wish Clark and Yuli the best of luck. As far as Clark Jr,
goes, the proud papa says that we should watch for the San Diego Chargers to
win the Super Bowl in about 20 or so years…led, of course, by their new star
quarterback!!!
